A very classic cake that's moist and sponge-y.. I got slightly carried away with the mixing resulting in a slightly mushy-marble effect. Oops! :)
Recipe for Chocolate and Vanilla Marble Cake
Ingredients:
225g butter, softened
225g caster sugar
4 eggs
225g self-raising flour
3 tbsp milk
1 tsp vanilla extract
2 tbsp cocoa powder
Method:
- Heat the oven to 180C. Grease a 20cm cake tin and line the bottom with greaseproof paper
- Beat the butter and sugar together until pale and creamy. (Do not be lazy - this step is really important! :P)
- Beat in the eggs, one at a time. Beat each egg into the batter until just combined. Do not over-beat it. You'll know it's "just combined" when you don't see the egg clearly anymore, but just streaks of yellow from the yolk.
- Then, beat in the sifted flour in 2-3 batches and mix in the vanilla extract and milk.
- Place half of the mixture into a clean bowl and add cocoa powder to that portion.
- Take 2 spoons and use them to dollop the chocolate and vanilla cake mixes into the tin alternatively. Tap the bottom of the tin on the work surface to ensure there aren't any air bubbles.
- Take a skewer and swirl it around the mixture in the tin a few times to create a marble effect. (Do not be over-enthusiastic with the swirling or you'll end up with a blurry marble effect - I am speaking from experience.. *sigh*)
- Bake for 45-55 mintes until a skewer inserted into the middle comes out clean.
